Saffron (Zafran / Kesar)
In Pampore, thousands of hectares of land is used to hand-pick what is known as the 'red gold' spice. Saffron or zafran is derived from the flower crocus sativus, and more than 150,000 flowers need to be picked to get just 1kg of saffron. Hence, the name 'red gold'. owing to the immense labour required to produce it.

Saffron (Zafran) is grown in a few places in the world, and the Kashmiri variety is considered the highest quality among those owing to its rarity and the labour intensive process involved.
